    More than just saying hello, why don't we cook together and learn from one another. My family comes from the small country of Ecuador in South America. We are a small but diverse country, with different regions being known for different things. The capital region of Quito, is known as "la Ciera". One of a popular dishes to make with family members is the dish we are making today, llapingacho. It is made with potatoes and tons of side dishes. All you need is the following:

    Serving size 2 people

    4 Yukon Gold potatoes

    3 Tomatoes on the vine

    1 Red onion

    1 Lime

    1 Mozzarella Cheese

    1 Sausage (of your choice)

    1 bag of lettuce of your choice

    1-2 eggs

    1 Can of Mote or Pazole or White Hominy Corn

    1 small bottle of packet of Adobo of your choice

    2-3 small packet of Sazon or Achote (red powder) of your choice

    Other household ingredients such as salt, pepper, oil.
