Cooking Modern Rustic with Sam

    About this event

    Cooking modern rustic: Three simple, and sure-to-impress dishes that make this the ideal meal for entertaining or busy weekday nights. You’ll be cooking with Sam, who now works at Instacart NYC in Operations, and was previously a chef in high-end NYC kitchens for 10 years.

    Make sure to have the following items for this cooking class:

    • 2 whole fish (Branzino is great! Make sure they are cleaned by your fishmonger)
    • 4 artichokes
    • 2-3 heirloom tomatoes or tomato mix you love
    • 1 bunch fresh thyme
    • 1 orange, 1 lemon, 1 lime
    • 1 head garlic, 1 shallot
    • 1 jar shelled roasted peanuts or your favorite nut
    • 2 tbsp mustard + 1/2 cup mayonnaise
    • 1 stick butter + 1.5 cup olive oil
    • 1 tub Labne (ricotta or yogurt are great subs)
    • 1 small jar zaatar or your favorite spice mix (a Middle Eastern spice mix featuring sesame and thyme - you can find this in most spice shops)

    Nice to have items, but are not required:

    • 1 small box coarse sea salt + some whole spices you have lying around, like black peppercorn, cumin, or coriander + 1 egg
    • Truffle butter (because who doesn’t love that)
    • Basil and other fresh herbs to add to your tomato salad
    • Greens for inside your artichoke, like Frisee
